The class takes you through the ingredients, sauces, and cooking techniques that are central to Chinese cuisine and shows you how to use them to produce dishes that have real depth and authenticity rather than the watered-down versions that pass for Chinese food in most home kitchens. You cook from the start of the session to the end and eat as a group when everything is ready. This workshop works well for vegetarians who enjoy Chinese food and want to be able to cook it properly at home, and for anyone curious about a cuisine that rewards technique and speed in equal
